Antonio Paoli is Professor and Chair of Exercise and Sports Sciences and Vice Rector for Wellness and Sport, at the University of Padova. He graduated in physical education (ISEF) in 1989, then in 2004 in Medicine and in in 2008 he earned the specialization in Sport Medicine. He became assistant professor of Sport Sciences in 2011 at the Department of Human Anatomy and Physiology, University of Padova (Italy). In 2013 he became associate professor and in 2018 full professor and chair of Exercise and sport Sciences at the Department of Biomedical Sciences, University of Padova . He is Professor and Chair of Strength Training and Sport Nutrition at the University UCAM (Murcia, Spain) and Head of Human Health Laboratory Lobachevsky University - Niznij Novgorod - Russia. From 2018 to 2021 he was appointed president of the Italian Society of Sport and Exercise Science (SISMES) and from 2017 to 2022 president of the European Sport Nutrition Society (ESNS). He is currently Director of the Nutrition & Exercise Laboratory at the Department of Biomedical Sciences. His research interests include ketogenic diet and fasting, the interaction of exercise and diet on skeletal muscle metabolism and the molecular bases of exercise training adaptation.

Andrew M Jones PhD DSc is Professor of Applied Physiology at the University of Exeter, UK. He is one of the world’s leading experts in the physiology of endurance sports, having studied the determinants of, and limitations to, endurance exercise performance for more than 30 years. Andy has published >370 peer-reviewed scientific articles and is one of the world’s most cited researchers in the sport sciences with ~40K citations, h-index of 109 and i10 of 311 (Google Scholar). Andy is Editor-in-Chief of the ACSM’s flagship journal, Medicine & Science in Sports & Exercise, and a member of the editorial boards of several other leading journals in the exercise sciences. Andy received ACSM’s prestigious Citation Award in 2020, accepted an honorary doctorate from the Free University of Brussels in 2023, and is an elected member of the Executive Board of the European College of Sport Science. Andy has a keen interest in the translation of sports science research to aid elite sports performance and is himself a former international distance runner who still holds UK junior age best performances at 10K and the half marathon.

Matthew Stults-Kolehmainen, PhD FACSM ACSM EP-C is an exercise physiologist (clinical role) at Yale New Haven Hospital (New Haven, Connecticut) and Adjunct Associate Professor in Applied Physiology at Teachers College – Columbia University (New York, New York).
His Ph.D. is from The University of Texas- Austin with post-doctoral and fellowship training at Yale Medical School, Teachers College - Columbia University, and the University of Jyväskylä (Finland).
He has authored 55 scholarly articles and book chapters. His research focuses on exercise, motivation, and psychological stress, and his clinical specialty is in bariatric surgery and the role of exercise in weight management

Dr. Moritz Schumann is a full professor of Sports Medicine and Exercise Therapy at Chemnitz University of Technology, Germany.
He received his PhD from the former Department of Biology of Physical Activity at the University of Jyväskylä (Finland) in early 2016 and pursued postdoctoral studies at Shanghai Jiao Tong University (China). Thereafter, he held positions at the Department of Molecular and Cellular Sports Medicine at the German Sport University Cologne (Germany) and the Department of Sport and Health Sciences at the University of Potsdam (Germany).
The research interests of Dr. Schumann are centered around interventional studies to improve sports performance and health in various populations, including elite athletes and patients with chronic diseases.
Recently, he has also initiated important work related to wearable technology as the co-coordinator of the INTERLIVE®- network that aims to improve the validity and reliability of wearable devices.
Dr. Schumann is also involved in other international consortia and has published over 90 peer-reviewed papers, over 80 conference abstracts and numerous book chapters in sports and exercise medicine.

Paul E. Wischmeyer, MD, EDIC, FCCM, FASPEN is a critical care, perioperative and nutrition physician who serves as a Tenured Professor of Anesthesiology and Surgery at Duke University School of Medicine. He also serves as the Associate Vice Chair for Clinical Research in the Dept. of Anesthesiology & Director of the Nutrition Team at Duke Hospital. Finally, he is the founder and Director of the Duke Clinical Nutrition Fellowship. Dr. Wischmeyer’s clinical and research focus is helping patients prepare and recover from critical illness and surgery. His research interests include surgical and ICU nutrition and exercise rehabilitation therapy, parenteral nutrition and personalized nutrition trials, perioperative optimization, post-illness muscle mass and functional recovery, and the role of probiotics/microbiome in illness. Dr. Wischmeyer receives significant ongoing funding from the National Institutes of Health, Department of Defense and Industry Sponsors. He has received numerous awards for his work from national and international societies, including the Jeffrey Silverstein Award and Memorial Lecture for Humanism in Medicine from the American Delirium Society, the John M. Kinney Award for the most significant contribution to the field of general nutrition, and the Stanley Dudrick Research Scholar Award of the American Society for Parenteral and Enteral Nutrition (ASPEN). He has >215 publications (H index-74 and >50 papers with >100 citations) in critical care, nutrition, exercise, probiotics/microbiome and perioperative care, including publications in New England Journal of Medicine. He has been an invited speaker at numerous national/international medical meetings, delivering over 1000 invited presentations in his career.

Dr. Georgina Gómez Salas is a professor and researcher at the Department of Biochemistry at the School of Medicine of the University of Costa Rica. She holds a Bachelor's degree in Nutrition, a Master's degree in Biochemistry, another Master's degree in Nutrition, and a Ph.D. in Sciences from the same university. In recent years, she has focused her research on studying the Nutritional Status of the Costa Rican and Latin American populations. The results of her research have been published in about 100 scientific articles in high-impact journals. Additionally, Dr. Gómez has involved undergraduate and graduate students in her research, both from the Nutrition program and other related fields. To date, she has participated in 20 postgraduate theses and 19 Final Graduation Projects. Furthermore, the results of her research have been shared with the scientific community and the general public in numerous national and international congresses, forums, and webinars, as well as with governmental authorities. Her research represents a very significant contribution to the development of knowledge and the establishment of public health policies for Costa Rican society, earning her the Clodomiro Picado Twight National Science Award in 2023.

Nidia completed her degree in Dietetics and Nutrition at the School of Dietetics and Nutrition in Mexico City. She continued her education by obtaining a Diploma in Sports Nutrition from the International Olympic Committee. She worked for over 9 years as a Nutrition Advisor at the Gatorade Sports Science Institute (GSSI) in Mexico, and also worked as a sports nutritionist with the academy teams of Club Cruz Azul, A.C. in Mexico City, where she contributed to the development of young athletes. Nidia is an ISAK Level 3 Anthropometrist and has taught multiple courses in the United Kingdom and other countries around the world. Currently, Nidia shares her knowledge as a Senior Lecturer in physiology and nutrition at the University of Stirling in Scotland. Her role not only involves educating the next generation of sports scientists, but she also leads the Master's Program in Sports Nutrition (MSc). Additionally, she is the Academic Director of the Mexican Federation of Sports Nutrition. Nidia's research focus is broad, encompassing topics such as hydration, body composition, nutrition, and metabolism in athletes and the general population. Her curiosity extends to people of all ages, and she is dedicated to advancing our understanding of human physiology in different contexts, including sports. Nidia has a particular interest in the physiology and metabolism of female athletes, and she actively participates in research projects to promote healthy aging.

With over 10 years of experience in managing and caring for patients with kidney disease, I completed my social service in nephrology at the National Institute of Nutrition "Salvador Zubirán", providing specialized nutritional care to patients with CKD, transplant recipients, and kidney donors in hospitalization and outpatient settings.
I have been a speaker at conferences, diploma courses, and congresses on various nutrition topics, as well as a clinical and teaching researcher for undergraduate, master's, and diploma programs both nationally and internationally.
I currently work as a clinical nutritionist in private practice, attending to patients with kidney disease, diabetes, cancer, surgical cases, endocrine disorders, and nutritional support, among others. I am a co-founder of the "Renal Quality Initiative" in San Mateo Atenco, State of Mexico, where I treat patients with various renal conditions.
